Our fridge is fixed, and I am back in the kitchen! Tonight, I'm making my family's favorite macaroni and cheese with cauliflower.
Here is my meal plan for the rest of the week.
Monday: green chili casserole with salad and tortillas

Tuesday: Empanadas and rice pilaf with tomatoes and olives (from Robin Miller's Quick Fix Meals) and sliced bell peppers
Wednesday: leftovers (I have PTA for my stepson)
Thursday: Tri-tip sandwiches with sun-dried tomato spread (this was one I was going to make before our fridge went on the fritz) with sweet potato and yukon gold baked fries.

I am amazed that you can plan a week's worth at a time. I am lucky to plan tonight's menu at 4 in the afternoon. I am going to try cioppino one night this week, because I would like to make it for company over the thanksgiving holiday and I need a trial run first. Garlic, wine & fish sounds like the perfect antidote to a heavy thanksgiving-day meal.
ReplyDeleteMmmmmm, cioppino! I wish I could make that for my family, but my little guy and I are the only ones who would eat that night! Can I come over?! I have to plan for the week, or I lose my mind! I make small changes (like when my mother in law sends veggies home with my husband) but planning helps me to stay sane!
