I thought last week was going to be mellow, and somehow I was wrong! I don't think we were home before 4:30 or 5 every day. This week is busy too. Since most of the week its just my husband and me, I'm keeping it simple!
Sunday: Eggplant Parmesan
Monday: Peperoncini Beef Sandwiches (Slow Cooker Recipe) These are soooo easy and sooo good!
Tuesday: Tomato Basil Soup and grilled cheese (I bought a jar of the Nordstrom Cafe Soup yesterday when I was out to lunch with a friend)
Wednesday: Leftovers
Thursday: Pasta with creamy mushroom sauce
Friday: Chicken Caesar Wraps
Saturday: Homemade Pizza

Weekly Menu Plan 1/9
Its cold! I know that's relative because its much colder elsewhere, but I'm cold! I spent the morning cleaning up my son's bedroom. He collects so many little junky toys, and they clutter up everything! I took 2 bags of junk out of his room. Its not exactly how I want it, buts its a start! I'm planning to do more cleaning while he has a friend over for a playdate. We'll see how motivated I get!
On to the week's menu plan:
Sunday: Baked potato soup
Monday: Pasta with turkey bacon, plum tomatoes, and spinach (recipe coming)
Tuesday: Buffalo Chicken Lasagna
Wednesday: leftovers
Thursday: Teriyaki Chicken Salad Sandwiches
Friday: sloppy joes and sweet potato fries

Menu Plan Week of 12/6

We had a wonderful weekend together! Yesterday, my cousin surprised us with front row center tickets to a performance he did here in our town (he lives in LA) It was a last minute thing, but it was so fun to see him perform and get in the mood with holiday music. What a treat!
Today, our church had our 2nd annual Advent Snow Day. We live in California, but by the magic of modern technology, we truck in snow and the kids have a blast playing in the snow together. After coming home to get out of wet clothes, we headed off to see Santa. What a great day!
So, with colder weather, rain and the holidays upon us, here's what I'm planning for this week:
Monday: Crockpot chili
Tuesday: Italian Chicken Strips
Wednesday: leftovers
Thursday: Fettuccine with spicy alfredo and asparagus

Menu Plan Monday Week of 11/28

I hope you all had a Happy Thanksgiving. Ours was quiet, we visited family and spent the last part of the evening visiting with our neighbors. My son comes home tomorrow after a week away, I can hardly wait!
I've enjoyed my week off, playing with my new toy. In fact, I enjoyed my iPad so much that I didn't start on report cards until today. After putting in a good 2 ours of work, I promptly lost all the work I had done. Talk about frustrating! I came back home and cleaned the kitchen (with my stepson's help) and went back to work on report cards. So frustrating! With all that work to do this week, its essential that I have a plan this week. If I don't we will eat out almost every night!

Its that time again, how does the weekend get away from me so fast?!

Menu Plan Monday week of 10/18

I think the hardest part of my school year is over. I finished my last parent-teacher conference on Friday. On weeks like last week, I am so glad I am in the habit of menu planning. It made such a difference in the chaos of a week like that! The plan right now is to have a small get-together for a pre-Halloween party next Sunday.
We've finally started having fall weather around here. I'm kind of excited for comfort food and cozy clothes.
Here's what I have planned for the week:
Crockpot Monday- Swedish meatballs
Tuesday: crunchy mango chicken strips with twice baked potatoes
Wednesday: leftovers
Thursday: baked potato soup with broccoli

Menu Plan Monday
I am in the middle of parent-teacher conferences, so dinners this week are going to be on the simpler side. I get home from conferences and I'm exhausted! I'm also trying to get in more workouts during the week. I've been a slacker when it comes to running and otherwise exercising!

Crockpot Tamale Pie
For filling:
1 lb ground beef
1/2 tsp cumin seed
1/2 tsp chili powder
1/2 red onion, chopped
1 14.4 oz can fire roasted tomatoes (I like Muir Glen Organic)
dash of salt, pepper to taste
1 16 oz. jar salsa (do not use fresh, uncooked salsa)
1 15 oz can kidney beans (you can use black or pinto beans too)
2 cups frozen corn
1 2.25 oz can sliced olives
Brown ground beef. As it begins to brown, add cumin seed, salt and pepper.
Once the beef has browned, add additional ingredients. Allow to cook until about 1/2 the liquid evaporates (you don't want a lot of liquid in the filling because it will make for mushy crust) Taste the filling, if it tastes a little too vinegary, add 1 tsp sugar.
For crust:
3/4 cup unbleached all purpose flour
1/2 cup cornmeal
1/2 tsp baking powder
1/4 tsp salt
1/8 cup sugar
2/3 cup milk
1 egg
1/8 cup vegetable oil
1/2 cup pepper jack cheese, grated
Mix all ingredients for cornbread together in large bowl as filling cooks down. Put filling on the bottom and layer the cornbread on the top. Cook in crockpot for 4 hours on low.
I cooked it for 6 hours and the cornbread topping was a little burned around the edges.
I always prep my crockpot dishes on Sunday night and refrigerate them so I can pull them out the next morning and put them in the cooking unit.

Menu Plan Monday
Whew! Last week was tough. I have to thank God for my husband who isn't just amazing every day, but was so incredibly amazing last week. It was amazing know ing he was there for me and that he would support me no matter what! I love that man! It was very cool to hang out with my cousins, my brother, and my aunt in SF yesterday.
I'm lucky to have those people in my life!
This week should be more back to normal. I'm not feel as emotionally run over, and I'm read to get back to my routine.
Sunday: Pineapple and chicken (or shrimp) poorboys with sweet potato fries

Tuesday: Bagel dogs and snap peas

Menu Plan Monday
My husband and I are just hanging out tonight, and I finished my latest sewing project (I'll post soon), so I thought I'd start working on our weekly menu.
Right now, I am dealing with an awful infestation of fruit flies that I think came in with some peaches last weekend. Last year, we got a few, and we were able to get rid of them pretty quickly. This year, its horrible. I've put everything away, and they are still multiplying and I feel like they are everywhere! Ick! Despite the nasty fruit flies, I go on cooking and taking care of my family! Right now I am giggling secretly as my husband does the fly killing dance in the kitchen. I wish you could see this, its very funny! And just so you know, fruit flies will not be on the menu!

Thursday: portobello and heirloom tomato paninis (yes, I'll post the recipe!)

Menu Plan Monday

Summer is in full force around here right now. Lazy days, music in the park, and BBQ today at church in honor of one of my family's favorite priests who is retiring. Tomorrow, we are heading over to the beach after my meeting in the morning at church. I hope you and your family are enjoying your summer!
Here's this week's menu:
Monday: Tequila flank steak in the crock pot. I'm going to serve it in soft tacos.
Tuesday: Southwest Sandwiches
Wednesday: Raviolis spinach, red peppers, and greek olives (this week's meatless meal)
Thursday: Leftovers
Friday: Salmon or Turkey burgers
Saturday: Empanadas

Menu Plan Monday

I had a great fundraiser with Pampered Chef and Creative Memories today. I think I made about $250 for my Team In Training Fundraising! I'm getting close to my goal. Its going well :)
This weekend was busy. I'm enjoying some down time right now, sitting and watching Fame from Pay Per View and planning my menu. This week is going to be a little different than usual. My birthday is on Wednesday, so we have lots of stuff going on. Also, I am so excited that my younger brother is coming to town! I haven't seen him since last March, before he left for Iraq. They're coming over on Sunday. I'm looking forward to seeing him and being able to cook for my sister in law and brother!
Here's the plan for this week:
Monday: crock pot stroganoff
Tuesday: Pineapple chicken quesadillas
Wednesday: We are all taking the day off and heading to Cheesecake Factory for lunch. Not sure what we'll do for dinner that night. Its my birthday, so I'm not planning dinner!
Thursday: leftovers or sandwiches
Friday: homemade pizza
Last week, I made a couple new family favorites. I will have to share the crockpot nacho recipe I came up with!

Menu Plan Monday

I hope you are all having a wonderful weekend. Yesterday, I had the honor of going to a bridal shower for a good friend over in Half Moon Bay at the Ritz Carlton. Wow! Wonderful food, and a beautiful view of the ocean. Did I mention it was amazing?! I think my husband and I need to go there and spend an afternoon. I was also asked to attend the baptism of one of my former students. Their family is Mormon. I am so glad I could be there and share in that special day for her!
Now the weekend is almost over and its time for me to plan our meals!
Sunday- I've been wanting a good hamburger all weekend, so my husband is out cleaning to grill and we're having burgers for dinner! YUM
Monday- Crock Pot Nachos
Tuesday- Broccoli, Ham and Swiss Crepes
Wednesday- Spagetti with spicy sausage and peas
Thursday: I have Open House at work. The boys have to be one their own!
Friday: I didn't make calzones last Friday, so that's what we're having this weekend!

BBQ pork sandwiches (crock pot)
I'm a terrible blogger! I forgot to take pictures of dinner last night. It was karate night, and we are running frantic from the time we get home until I get my son to bed. I hope you all will forgive me. Here is my BBQ pork sandwich recipe. My husband wanted another sandwich, but said he had no room in his tummy. My stepson ate his (he's not a huge fan of pork) and my son loved it too!
Chili BBQ pork sandwiches
2 lbs pork tenderloin
2 tbs. high quality chili powder
1 tbs coarse salt
1 16 oz can tomato sauce
1 tbs Worcestershire sauce
1-1/2 cup shredded carrots
1/3 cup water
Rinse and pat dry pork tenderloin. Season both sides of the tenderloin with chili powder and coarse salt. Place the seasoned tenderloin in the bottom of the crock pot. Add shredded carrots. Pour can of tomato sauce and Worcestershire sauce over the tenderloin. Cook on low for 6 hours. Mine sat on warm for quite a while and was delicious and tender. This is definitely a do over! I served it with baked sweet potato fries.

Its going to be a crazy week!
I was just thinking about what this week is bringing and I'm a little shocked! We eat out about once a week, sometimes twice, but rarely like its going to look this week!
