Menu Plan Monday

I am in the middle of parent-teacher conferences, so dinners this week are going to be on the simpler side.  I get home from conferences and I'm exhausted!  I'm also trying to get in more workouts during the week.  I've been a slacker when it comes to running and otherwise exercising!

Here's what I have this week:

Monday: split pea soup

Tuesday: Quesadilla Pie

Wednesday: leftovers

Thursday: Ravioli with roasted zucchini

Friday: southwest chicken panini I want to try it with sourdough

What are your ro-to recipes when you're busy and still trying to make healthy meals?
