Menu Plan for the week

My son and I enjoyed the break in all the rain we've been having and took a stroll through the local farmer's market today. Every time I do that, with the sun shining and the beautiful fruits and vegetables at all the stands, I am so thankful for where I live! We ate falafel and strolled down the farmer's market admiring all the delicious fruits and vegetables! It was so fun to see the reaction on peoples' faces when they saw a 5 year old eating (and loving) falafel!

So, on to my menu plan for the week...

Sunday: Lentil soup and cornbread

Monday: orange chicken with broccoli and brown rice

Tuesday: macaroni and cheese with cauliflower

Wednesday: frittata

Thursday: leftovers (I have training on Thursdays now from 6:15-8:00, so its find something in the fridge day for the next few months!)

Friday: pizza night

Saturday: I am hoping my hubby and I can go out and celebrate an early valentine's day together since the following week, we head off for family vacation in the desert (which will hopefully be warm and dry!

Friday Blahs!

Its Friday and I am exhausted. Its been a long and emotional week, and I don't want to make any decisions tonight! On Fridays, our family tradition is to order pizza and watch a movie together. Pizza doesn't sound good right now, and I can't decide what does! It may be time to try something new. Let me see... I hope inspiration hits soon, its almost dinner time!

Monday Meal Plan

It's a busy week this week, so I will be making extra food today and tomorrow and my husband and stepson will have their choice of leftovers on Wednesday and Thursday.

Here is what I have planned:

Monday: Chicken Tetrazzini
I love this recipe! I got it all prepped last night, and my stepson just has to get it in the oven for us so its ready when we get home from karate. The younger boys don't like mushrooms, but its easy for them to pick them out since my husband and I love them!

Tuesday: Pulled Pork Sandwiches with Cranberry Barbeque sauce


Wednesday: I'm out, so its leftovers or soup!

Thursday: same thing

Friday: homemade pizza

Saturday: lentil soup Its been raining a TON here and I want to make a big pot of soup that we can munch on through next week. With the soup, comes paninni sandwiches because I have to use my new soup and sandwich plates! They were part of a purchase with gift cards from the holidays, and they got here over the weekend, I must use them!! I am going to create my own recipe, so I will post the recipe and let you know how it goes!

Soups On!

I can't believe how fast this year is going! Between our 3 day weekend trip and being back in school, I haven't had any time to blog. So much going on! I've been making soup this week. Its pouring rain here in CA, and I feel like we are going to end up sailing away soon. Better start that boat building.

Last night, we had a yummy white bean soup that I made in the crockpot. Monday evening, I placed my inner pot on the stove and added come panchetta. I let it cook for about 5 minutes. After it had browned, I added 1/2 an onion and 4 sliced carrots (about 1/4 inch thick) While that was cooking a little, I put the beans in water to soak over night. Once the onions were tender, (about 5 more minutes) I added in 2 boxes of free range chicken broth. I put the crock pot with all these ingredients back in the fridge. The next morning, I drained and rinsed the beans and added them to the pot. We got home around 5:30 and the house smelled delicious! I added a little fresh chili powder and made paninnis to go with it. So yummy!

New Year, New week, First menu plan of 2010

Since I go back to work on Monday, I want to get myself and my family ready to go back to work and school. We had a great holiday, and I hope my readers did too! (Gingerbread house decorating will be posted tomorrow, the kids had a blast, it will be an annual event between our 2 families)

Now for my meal plan for next week:
Monday:
Balsamic Chicken with Baby Spinach and Couscous (from Ellie Krieger's The Food You Crave)
Tuesday:
Chicken and Dumplings
Wednesday:
Leftovers (I have PTA meeting)
Thursday:
tacos or burritos
Friday:
pizza

I'm excited about Monday's meal because I can use my new cookbook I bought myself over break. Did you get any new cookbooks to use for cooking in the new year?
