Raspberry Mocha Cookies

There are few things I enjoy more than raspberries and chocolate.  There, I said it.  Maybe when my husband brings me raspberries and chocolate.  When my favorite coffee shop brings out their raspberry mocha every February, I feel like its my birthday.  I need to stop talking about it now because I may start drooling on my keyboard, and that would be bad.  I don't think my husband will let me get a new one!


These were modified from a recipe from Taste of Home's Complete Guide to Baking

1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
3/4 cup chocolate chips, melted and cooled
1/2 cup fresh raspberries, pureed
3 cups all-purpose flour
3/4 tsp baking soda
3/4 tsp salt
1 cup cappuccino chips

Preheat oven to 375 degrees.  Measure flour, baking soda, and salt in large bowl and set aside.  Cream butter and sugars until light and fluffy.  Add eggs, one at a time and beat well after each addition. Mix together raspberry puree and chocolate.  Add to sugar, egg and butter mixture.  Slowly add flour to mix. Mix in until combined.  Add cappuccino chips.

Drop by spoonfuls 2 inches apart on baking sheet.  Bake for 10-12 minutes.  Cool on wire rack.

Cranberry Cinnamon Oat Scones

It has been raining constantly here!  I was supposed to have a doctor's appointment after work today, but I cancelled it and come home.  Traffic and this rain made me just want to be home.  I took  a nap after I watched Law and Order SVU from last night.  After my nap, I decided I needed to bake!  Isn't that what you do when its raining outside?
Cranberry Cinnamon Oat Scones
(adapted from Taste of Home's Complete Guide to Baking)

2 cups all-purpose flour (I use a mix of unbleached white and white whole wheat)
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup shortening
1 1/4 cup oats
3/4 cup milk
1/2 cup dried cranberries
for topping:
cinnamon and sugar to taste for topping
butter spray 

Preheat oven to 375 degrees

In a large bowl, combine flower, sugar, baking powder, baking soda and salt.  Cut in shortening and combine until crumbly.  I used my kitchen aid, it worked great.

Add oats and milk and mix until it forms a ball.  Add in cinnamon chips and cranberries.

Take dough out of mixer and place on a lightly floured surface.  Roll out dough and cut to 3/4 inch thickness.  Cut with 2 1/2 inch biscuit cutter.  Place 1 inch apart on baking sheet.  Bake for 15-20 minutes.


When they come out of the oven, spray with butter spray and dip into sugar and cinnamon mix.

Ham and Cheese Pockets and Menu Plan


I thought I'd share one of my latest creations.  I made these last weekend, and they were delicious!  Such a great lunch for cold, rainy days.  I froze them and enjoyed a couple for breakfast this morning.  Yum!
                                      
Ham and Cheese Pockets

  • 2 1/4 tsp active dry yeast
  • 1/4 cup water, warm (100-110F)
  • 1/2 buttermilk(100-110F)
  • 1 tbsp sugar
  • 2 cups flour (I used a mix of whole wheat and unbleached flour)
  • 1/2 tsp salt
  • 4 tbsp butter, room temperature

In the bowl of a stand mixer fitted with a dough hook, or in a large bowl if you prefer to mix by hand, combine yeast, water, milk and sugar. Let stand for 5 minutes, until foamy. Add in bread flour and salt and mix well with a dough hook. Cut the softened butter into three or flour pieces and drop them into the dough, letting the mixer blend them in.
Knead (with a mixer or by hand) for about 2 minutes. Cover the bowl and let rise for 45 minutes in a warm place.

Filling:
6-8 slices deli ham sliced into 1/4 inch pieces
2 green onions, sliced 
1/3 cup Greek yogurt (you can use cream cheese too)
1/4 cup grated cheese (I used a combination of mozzarella and sharp cheddar)
salt and pepper to taste

Preheat oven to 400 degrees
Roll out dough to 1/4 inch thick.  Using a cutter, cut into 3 inch diameter circles.  Drop 1tablespoon of the filling onto half the cut rounds, then fold over and seal the edges with your thumb.

Bake for 10-12 minutes until outside is browned and crisp.

english muffins (homemade) with peanut butter or nutella
cereal
granola

Lunches:
quesadillas
sandwiches
spinach salad

Dinners:
Sunday: balsamic marinated flank steak with tomato and chorizo salad, asparagus
Monday: BBQ turkey sandwiches with caesar salad
Tuesday: It's Little Man's 7th birthday.  He wants Mommy's Mac n Cheese
(gives me warm fuzzies that he could have anything he wants or go out, and he asks for this!)
Thursday:  leftovers or take-out
Friday: Homemade pizza with Beer Battered Pizza Dough

More crackers

Tonight I made these...

 Cheddar Cheese Crackers

They are so good!  I have to stop eating them!   I used the pepper and used white cheddar.  Yum, yum, yum!  I will never eat goldfish crackers again!

I used all sorts of my mini cookie cutters.  I couldn't find my heart-shaped one though.  I hope I find it this week.  I want to make a whole bunch of heart cheese-shaped crackers!

And so I bake!

Isn't there an old saying that goes when the going gets tough, the tough get to baking?!

Earlier this week, I was browsing The Pioneer Woman and stumbled on her brownie recipe.  I sent my stepson across the street to get some chocolate chips and baked us up some of the most delicious brownies I think I have ever tasted!  She doesn't have her recipe on her blog (you have to buy her book) but let me tell you, these brownies are worth buying the book for!  My husband even told me that he thought they were the best he'd ever tasted, and let me tell you, my husband knows his sweets!

Tonight, I decided I wanted home-baked hamburger buns for our sloppy joes, so I made these.  I'm not sure if it was the hamburger buns or my homemade sloppy joes, but it tasted amazing!  I had seconds.   I think I need to make a couple batches of these and freeze them.  I never want to buy hamburger buns at the store again!  I made a few with sesame seeds on top and a few with coarse salt.  I loved the salty ones.  The recipe was easy to follow and very easy to make.  I hope you enjoy!

Snickerdoodle Bars

I wish I could do a scratch and sniff for you.  We have our volunteer tea for parent helpers tomorrow and I made these.  I haven't tasted them yet, but oh, my house smells so amazing!  I wish I could invite you over for a cup of tea and a Snickerdoodle bar!

Merry Christmas!

I hope you all had a wonderful Christmas. Our day was mellow, and my husband, stepson and I had Christmas with my in-laws today, but we will do Christmas on Sunday as a family, when my son is home. I am so excited, he gets home tomorrow! He's been gone too long.

I made rolls, pumpkin pie, and 2 types of cookies yesterday. I want to share a couple of the recipes with my readers later this week, but I am going to try one of them again because it didn't turn out quite right. I will also be making peanut butter and snickerdoodles (again) to send over to my bother in Iraq. I wanted to make them with my son next week so he can add to the Christmas box we're sending over.

We did open gifts today at my in-laws today and I got this! In the next few weeks, I am sure I will be posting my new adventures with it. I have been attempting to do them in a pan on the stove, and its just not the same. I can't wait to start making sandwiches and other things on my new panini press! Tomorrow I will be working on the chocolate cake for our Christmas dinner on Sunday with my dad.

Tis the season...


for cookies! I'll be baking some different ones next year, but tonight its the simpler ones. One of my favorites to make is the Craisin white chocolate chip cookie recipe. Its very simple and easy to make, and you can add whatever suits your fancy to the recipe (like semi-sweet chocolate chips)

They are yummy, and just the thing to start with! Did I mention I'm just beginning?
