Freezer Meals

Well, it happened.  I went into preterm labor on Thursday night and I'm on bed rest for as long as I can keep our baby boy in!  I'm sending my darling hubby to Costco today to pick up meats for us and I think I'll be doing some kitchen directing from the couch this afternoon!  Its so rare for me, but I don't even want to watch cooking shows because it makes me sad that I can't get up and cook.  Fortunately, I have a wonderful hubby and friends who are pitching in :)  My friend set us up an account on mealtrain.com.  Between that and my directing skills, I think we will be fed :)

Sunday- ordering Bucca Di Beppo to celebrate for my dad's birthday dinner
Monday- Chicken and Broccoli Bake
Tuesday-leftovers
Wednesday- Flank Steak with Chimichurri sauce
Thursday- A friend is bringing us dinner
Friday- Homemade Frozen Pizza
Saturday- Tortellini with pesto sauce

Some additional things we'll be making for the freezer:
Carne Asada
Spicy Asian Chicken
Easy Ranch Chicken
Spicy Shredded Pork
Italian Muffaleta Sandwich

Weekly Menu Plan

I'm getting to that point where everything hurts :(  My mantra right now is 3 more weeks of work, 3 more weeks of work.  I'm ready to be home and do some nesting and some resting and prepare our family for our new addition!  This week is a lot about comfort food.  Comfort food and easy!

Sunday: Family birthday party
Monday: Crockpot Chicken Tikka Masala
Tuesday: Fundraiser for school, I'm picking up dinner there
Wednesday:  Tortellini with Broccoli and Homemade Alfredo
Thursday: BBQ Joes and Sweet Potato Fries
Friday: Leftovers

Hope you have a great week!  What's on your menu?

Weekly Menu Plan

Its hard to believe our baby boy will be here soon!  We took our childbirth class yesterday, and the boys' room is coming together.  The crib is put together, and we ordered monogram letters for baby boy.  I start my every other week appointments this week.  I have 4 weeks left at work.  My priority at work right now is getting my adorable first graders assessed in reading and getting report cards.  I also need to get loose ends tied up for my sub to take over.  Starting next month, I'll be stocking our freezer with some meals for after our little guy is born.  I'm trying to prioritize and not get too overwhelmed with the list of things that need to get done!

Here's our menu plan for the week:

Monday: White Bean Soup with spinach and feta paninnis
Tuesday: Crockpot Beer Cheddar Tacos
Wednesday: Tortellini with Mushroom Sauce
Thursday: Honey Garlic Chicken Sandwiches (I'm using this crockpot recipe and adding some cilantro and cucumbers to make a sandwich.  I'll serve it with sweet potato fries)
Friday: Pizza and Movie night

Another week, another menu

I'm excited this week because I got word from my doctor that she's going to put me on maternity leave starting 2/17!  That means I have 5 weeks to go.  I know I'll miss my students, but my body is ready for some relax time.  I'm kind of on overload.  I don't know why, but I've been feeling very emotional.  I'll make it though, and everything will be ready when I leave, but I'm definitely ready to have the end in sight!  I'm excited to meet our little guy (although, my son was born at 35 weeks, and I'd like this one to stay in a little longer than that!)

Here's our menu for the week:
Sunday:
Monday: Pesto Minestrone Soup (crockpot) and breadsticks
Tuesday: Asian Spicy Chicken and crab rangoon
Wednesday: Meatloaf with Chili Sauce
Thursday: Leftovers
Friday: Tortellini with homemade marinara sauce

What's on your menu this week?

Menu Plan Week of 1/9

My husband and I went and sat in the sunshine today at one of our favorite wineries and talked.  I had a sip or 2, then found an amazing pinot soda that I enjoyed the rest of the afternoon.  We both realized that in about 9 weeks, our baby boy will be here.  I can't believe we'll be able to hold him that soon!  I'm having difficulty sleeping and being comfortable now.  My husband says I'm not waddling yet, but I'm definitely slower when I'm walking.  I'm trying to keep it simple this week.  I want to make it to yoga on Wednesday and I have a couple appointments this week too.  Oh, and hubby and I decided I need to get my hospital bag packed this week so I can check that off my list!

Menu Plan Week of 1/9
Monday: Broccoli Cheese Soup
Tuesday: Pork Shoulder in the crockpot
Wednesday: leftovers
Thursday: Chicken Tikka Masala (we never had it last week)
Friday: pizza and movie night

Hope you all have a great week!
