Menu Plan Monday

We're back in full force with school and activities.  We don't have karate this week, but there's swimming and Back to School Night.  I also want to check out our school Boy Scout Troop and see if its something we want to sign up for.  I think it might be a fun social thing for my son.

So, here's our menu for the week...

Sunday: We're heading to the Eat Real Food Festival, so I'm sure we'll eat there and be full!

Monday: Crockpot korean-style short ribs

Tuesday: Curried chicken pasta salad

Wednesday: BLC sandwiches

Thursday: Back to School Night, I'm not home 'til late.  Everyone is on their own!

Friday: Chicken wings and potato salad

Menu Plan Monday

Last week was tough!  I went back to work, and who knew that 20 6 year olds could wear me out like this?!  I came home on Thursday and Friday and took naps.  I also ended up not cooking much last week.  I was too exhausted!  Next year, I will have to plan ahead a little better and have some casseroles in the freezer that I can just take out and stick in the oven.  So, enough about the past!  This week its all about easy.  Well, sort of!

Sunday: spicy squash soup (squash from my garden)  I'm using this recipe as a starting point.

Monday: pulled pork sandwiches with

Tuesday: Taco Ring

Wednesday: leftovers

Thursday: Cheese tortellini with homemade pesto sauce

Friday: Teriyaki meatball sandwiches and fruit skewers
(My husband and I went to Costco today and tried the Aidel's meatballs.  We had to have some!  Makes for an easy Friday dinner)

Lunchbox ideas

My son and I sat down tonight to make a list of things he'd like to have in his lunch.  Here's what we came up with...

Tortilla wraps with cream cheese, salsa, cheddar and lettuce

mini bagel pizzas

cheese, salami and crackers

mini bagels with cream cheese

turkey sandwiches

quesadillas

pasta with parmesan

leftovers

almond butter sandwiches

tuna salad and crackers

cream cheese/walnut spread

Weekly Menu

Well, summer is over, its back to work tomorrow.  Gone are the big creative meals, abandoned for quick and easy!  It was a great summer; I finished my first half-marathon, visited with friends and family, enjoyed time with my son and my husband, and found some time to scrapbook and read.  The next few weeks will be filled with craziness, so meals will be quicker and easier.  I'm
 also back to faithfully doing Crock Pot Mondays, next week.  I'd love to get input from you on how you use your crock pot to simplify busy school days too!

So, here's my menu plan:

Monday: I have a meeting til 8, so after karate we're stopping to get dinner

Tuesday: Chicken Pasta with thyme-mint sauce

Thursday: leftovers

Friday: I'm hoping my hubby will take me out for dinner and a movie!  Otherwise, we'll raid the freezer!

Sewing Machine

I know, you'd never know from reading this blog about my crafty habits.  I love to knit, sew, and scrapbook, go figure?!  So, you ask, why doesn't she ever post the things she knits or sews?  Well, last summer, when my hubby and I moved into our new house, a sewing machine disaster struck.  Well, to those who don't sew, its not really a disaster, but one small thing has been disastrous to my sewing machine.  The little plastic piece that covers the bobbin so the fabric feeds through and doesn't get caught in the thread disappeared.  Without that, I can't use my machine.  After a year of sporadically looking on websites and going to the local sewing machine part stores, I finally found what we think is the part on-line last night.  $10 later, its on its way.  I can't wait!  There's curtains to sew, a skirt to make, Halloween costumes to sew.  Now the problem is, its going to come in right before I go back to work.  Um, how are these projects going to get accomplished?!  I'll keep you posted!

Menu Plan Monday

Before I start with my weekly menu post, I just have to say that this is my 100th post!  Woohoo!  I hope you enjoy reading my blog, and my mumblings!  I've really enjoyed being able to share my recipes and ideas.  Cooking is one of my favorite things and I really enjoy sharing.

This is my last week before school starts.  I'm looking to spending some time with my little man and hanging out!

Today, I made a cocoa rub tri-tip and phyllo-wrapped asparagus for dinner.  I'll post the recipe and results later!

Monday: Leftover tri-tip sandwiches with alexia fries and green beans

Tuesday: dinner with friends

Wednesday: Sausage and onion with ravioli

Thursday:  turkey and salmon burgers (we ended up not having them last week)

Friday: Homemade pizza

Quick lunch

Yesterday, we had a busy afternoon, but our morning was lazy.  I started making my son's lunch and realized that if we were going to get to his playdate on time and I was going to get a couple errands run, I needed to pack lunch for the car.   I didn't want to stop anywhere and spend money and eat junk!  So, this was my quick throw together lunch for my son while we were on-the-go!  Its in his laptop lunchbox, which I have raved about before!


Peanut butter and honey sandwich, proscuitto wrapped cantaloupe (toothpicks left over from last spring), carmel corn (hubby and I couldn't resist it last week at Costco) and carrots.  Like I said, it was quick and easy!

Menu Plan Monday

Summer is winding down, and I have to start going into my classroom this week to get it ready for my new group of first graders.  My husband and I celebrated our first wedding anniversary yesterday, I'll post a couple things about that soon!

Here's our plan for this week.  My stepson is down with his grandparents for the week (driver's training, ack!), and we don't have my son again this weekend because of a wacky month of custody scheduling.  This week is going to be pretty simple as far as food goes.

Monday: We're stopping at Wing Stop on the way home from karate

Tuesday: Dinner with friends (last visit before back to school) hubby having leftovers

Wednesday: Proscuitto Pasta

Thursday: Pineapple BBQ chicken quesadillas

Friday: Turkey and salmon burgers
