We had a great time on vacation! The hotel had a small kitchen that we were able to use a couple times. Thank goodness for Trader Joes! He hit there first thing Monday morning. We picked up munchies, cereal, milk, and stuff for a couple dinners. Trader Joe's now has mini burgers already haped. I wouldn't get them at home, but while using a much scaled-down kitchen at the resort, it was quite handy. I also managed to make spaghetti sauce, which we had over raviolis. It wasn't the normal fare I make, but it was edible!
And, we were home for less than 24 hours, and I made quite a spread to celebrate my wonderful husband's birthday with our boys and my in-laws. (I'll post the recipes and pictures of that in a bit!)
So, you ask, what's on the menu for going back to work this week?
Tonight, I plan to make another batch of bread dough so we can have fresh bread throughout the week.
Crockpot Monday: Spanish Brown Rice with Spicy Sausage (p.153 Not Your Mother's Cookbook) I'll serve parmesan broccoli with it.
Tuesday: enchiladas
Wednesday: tortellini with spinach, fresh herbs, and prosciutto
Thursday: leftovers for my stepson and dinner out after my track workout with my hubby
Friday: sloppy joes
Saturday: special dinner for hubby for his actual birthday! I'll be cooking all day while he's at work!

Sick kiddo at home
I planned to get my menu plan up on Sunday night, but I got a call from my son's dad saying that my son had a nasty cough, so my husband and I ran over to my school to get my sub plans ready for the next day. I'm home again today with a sick kiddo. My poor little man- he's got a nasty cough and that sick look in his eyes. Being an almost 6 year old boy, he gets bursts of energy, then collapses. I'm trying to keep him calm with movies and games, so we'll see.
Last night, I used my new crockpot (hubby got me a programmable one since mine cracked, and I was burning dinner on karate night) I made lemon chicken I made a couple changes to the recipe though. I added rice vinegar instead of balsamic, and I used tomato paste with added water instead of ketchup. It was good, but I want to play with it again and see if I can make it better!
Tonight, I really want to bake some homemade bread, so we'll see if that happens! Hubby asked for tacos, so I am compromising and making this I haven't made that one in a long time, so it will be fun to do again.
Wednesday night, I'm going to make corn chowder and we'll have homemade bread with it.
Thursday is leftovers
Friday we'll have homemade pizza.
Next week, we will be heading out for vacation. We're staying at a resort that has a kitchen in the room. I think we will probably eat breakfast and lunch in the room, we'll see what I can stir up!

Menu Plan for the week
My son and I enjoyed the break in all the rain we've been having and took a stroll through the local farmer's market today. Every time I do that, with the sun shining and the beautiful fruits and vegetables at all the stands, I am so thankful for where I live! We ate falafel and strolled down the farmer's market admiring all the delicious fruits and vegetables! It was so fun to see the reaction on peoples' faces when they saw a 5 year old eating (and loving) falafel!
So, on to my menu plan for the week...
Sunday: Lentil soup and cornbread
Monday: orange chicken with broccoli and brown rice
Tuesday: macaroni and cheese with cauliflower
Wednesday: frittata
Thursday: leftovers (I have training on Thursdays now from 6:15-8:00, so its find something in the fridge day for the next few months!)
Friday: pizza night
Saturday: I am hoping my hubby and I can go out and celebrate an early valentine's day together since the following week, we head off for family vacation in the desert (which will hopefully be warm and dry!

Friday Blahs!
Its Friday and I am exhausted. Its been a long and emotional week, and I don't want to make any decisions tonight! On Fridays, our family tradition is to order pizza and watch a movie together. Pizza doesn't sound good right now, and I can't decide what does! It may be time to try something new. Let me see... I hope inspiration hits soon, its almost dinner time!

Monday Meal Plan
It's a busy week this week, so I will be making extra food today and tomorrow and my husband and stepson will have their choice of leftovers on Wednesday and Thursday.
Here is what I have planned:
Monday: Chicken Tetrazzini
I love this recipe! I got it all prepped last night, and my stepson just has to get it in the oven for us so its ready when we get home from karate. The younger boys don't like mushrooms, but its easy for them to pick them out since my husband and I love them!
Tuesday: Pulled Pork Sandwiches with Cranberry Barbeque sauce
Wednesday: I'm out, so its leftovers or soup!
Thursday: same thing
Friday: homemade pizza

Soups On!
I can't believe how fast this year is going! Between our 3 day weekend trip and being back in school, I haven't had any time to blog. So much going on! I've been making soup this week. Its pouring rain here in CA, and I feel like we are going to end up sailing away soon. Better start that boat building.
Last night, we had a yummy white bean soup that I made in the crockpot. Monday evening, I placed my inner pot on the stove and added come panchetta. I let it cook for about 5 minutes. After it had browned, I added 1/2 an onion and 4 sliced carrots (about 1/4 inch thick) While that was cooking a little, I put the beans in water to soak over night. Once the onions were tender, (about 5 more minutes) I added in 2 boxes of free range chicken broth. I put the crock pot with all these ingredients back in the fridge. The next morning, I drained and rinsed the beans and added them to the pot. We got home around 5:30 and the house smelled delicious! I added a little fresh chili powder and made paninnis to go with it. So yummy!

New Year, New week, First menu plan of 2010
Since I go back to work on Monday, I want to get myself and my family ready to go back to work and school. We had a great holiday, and I hope my readers did too! (Gingerbread house decorating will be posted tomorrow, the kids had a blast, it will be an annual event between our 2 families)
